1/2 cup Daria's peanut butter (see below)
1/2 cup natural honey
6 cups organic puffed brown rice cereal (no salt added)
2 oz. dried tart cherries, rough chopped
2 oz. dairy free, salt free chocolate chips (Sunspire brand)
Place peanut butter and honey into a large pot, warm over medium heat until blended and smooth. Stir in the rice and remove from the heat. Stir to coat. Stir in the cherries and chocolate chips. Press into a 9 x 13 inch pan that has been lightly sprayed with salt free cooking spray. Press down using a piece of waxed paper to protect your hand. Place in the refridgerator for an hour to set. Slice into 15 yummy snack bars!
Daria's peanut butter:
One 16 oz. jar of natural peanut butter (no sugar or salt added, e.g. Maranatha brand)
1 teaspoon Kosher salt (iodine free)
3 tablespoons white sugar
Place all three ingredients into a food processor and blend until smooth. This makes the peanut butter more palatable and prevents separation. Store in the fridge. For chocolate peanut butter, add 1/4 cup LID safe cocoa and an additional 2 tablespoons of white sugar plus 1/2 teaspoon vanilla extract.
