Oh, it is good to be home! The LID while on the road is just plain annoying!! Today I made LID corn muffins. I used the recipe right on the Quaker corn meal box, used water with a teaspoon of vanilla for the skim milk, used egg white for the egg and used Kosher salt for the salt. They came out very well!
I'm treating myself to some Rich's brand creamer in my decaf. It's listed as Pareve (no dairy) and contains no salt. I've heard from other ThyCa friends that this is LID safe. Since I can not verify it for sure, I'll only use it during days 1-7. The second week I'll give it up. You can learn more about the Pareve designation at Wikipedia if you want - it means the food is Kosher and "neutral" or containing no meat or dairy...this is a handy designation to utilize when on the LID diet. Just remember that Pareve DOES NOT mean LID safe all the time. For example, fish is Pareve but not safe for the LID. Read your labels!!
Today I hope to make some Almond milk and maybe bake bread. I have not been in a bread-baking mood and while I have the ingredients, I just haven't had the desire.
Tomorrow I'll take Communion to the shut-ins in Waverly...debating if I should swallow the Communion wafer...probably will this weekend, but not next weekend.
