I made AWESOME pancakes this morning for breakfast and they are LID safe!! I used almond milk.
Pancakes:
1 cup whole wheat pastry flour
2 tablespoons yellow cornmeal
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon Kosher salt (Iodine free)
1/4 cup egg whites (approximately 2 egg whites)
1 cup LID safe Almond Milk
1 teaspoon apple cider vinegar
1 teaspoon vanilla extract
1 tablespoon vegetable oil (I used canola)
Mix the dry ingredients and set aside. Mix the wet ingredients and fold into the dry. Don't over mix and mix until just wet. Let the batter sit for 10 minutes. It will get puffy from the baking soda and baking powder. Give it another light stir to knock down any large lumps. Small lumps are OK.
Cook on a 400 degree griddle. Turn when the edges get slightly brown and the tops bubble. Remove from the griddle when done. I topped mine with pure maple syrup and some Fleischman's LID safe dairy free salt free margarine.
