Well, I did it. I made almond milk over the weekend and today I actually used it. The verdict is: I'm not really thrilled with almond milk. It tastes and feels like water with an "overtone" of almonds. I had it today on plain shredded wheat cereal with banana for breakfast.
The home baked bread made for a decent chicken sandwich for lunch...missed the mayo :-(
I picked up a couple of avocados today on the way home from work to use as sandwich spread tomorrow since I can't have butter, mayo, mustard, catsup, etc. I also picked up white beans and cabbage to get more calcium. The white beans are slow cooking in my crock pot right now!
Tonight it's roasted asparagus and chicken for me. Bob and Olyvia will get smoked pork chops since they are tired of chicken (me too).
I'm getting antsy now. I just wish it were 12 March and the scan were done! Patience, patience, patience. Patience is a virtue (I sometimes prefer vices). Just kidding :-)

For Lent this year - I've selected a scripture passage to reflect upon daily. It's the same one every day. It speaks to me, especially during this countdown to the scan. I hope you all find joy in this passage as well:
