One week until I'm RADIOACTIVE -- Plus a LID Recipe

I think I figured out why I'm so tired.  Carbs.  This diet has a lot of safe carbs.  Fruits are safe.  Most veggies are safe.  Those are all carbs.
Today I telecommuted.  That made life a lot easier.  I didn't have to think about packing up breakfast, packing up lunch, etc.  Tomorrow I make a quick business trip down to West Des Moines to see a supplier.  I'll have to plan ahead with meals and snacks for the day.
Today's breakfast was actually quite yummy!  I made cream of wheat:
LID Recipe for Cream of Wheat Cereal
1 1/4 cup almond milk (see below)
1 teaspoon safe margarine (Fleischman's salt free, dairy free, marked as Pareve)
1/4 heaping cup Manischewitz cream wheat cereal
pinch of Kosher salt
1 teaspoon honey
1/2 teaspoon vanilla extract
1/4 teaspoon cinnamon

I warmed the almond milk, stirred in the margarine, cereal, salt, honey and cinnamon.  I stirred it well as it bubbled over low heat, for about a minute.  I removed it from the heat and added the vanilla extract.  Stirred it up and ate it!  It was awesome.

To make almond milk:  Put 1 cup raw unprocessed almonds whole almonds and 2.5 cups of water in a blender.  Blend well until the almonds are pulverized and the mixture is milky white.  Add the sweetener of your choice - but NOT brown sugar or molasses.  I used 1 Tablespoon of Agave syrup.  Blend well.  Pour through a fine strainer.  Refridgerate the milk.  It will keep for 3-4 days.  You can save the almond pulp and put it into brownies or smoothies.  I tried to dry the almond pulp out and planned to use it as a crust on chicken.  I put it into the oven to dry it out and forgot about it and it turned into burnt almond crust...so it got tossed!  I still think it would have been good on chicken.
